Bouquet: Intense and complex, with hints of ripe black berries such as blackberries, mentholated notes, and roasted nuances reminiscent of hazelnut, chocolate, and cocoa
Taste: Decisive and full attack, intense and full-bodied, well-structured with ripe, sweet tannins. Elegant, with a balanced and persistent finish
Alcohol content: 13.8%
Serving temperature: 16 - 18°C
Pairings: Pairs well with red meats and braised roasts; ideal when paired with dark-meat poultry such as guinea fowl, squab, and duck
Terroir: The grapes come from the Mendrisiotto region, characterized by a favorable climate and soils that give the wine a marked tannic structure and good minerality.
Vinification: Bordeaux-style vinification with 11-15 days of maceration at 28-32°C in stainless steel tanks. Aged in new (60%) and second-fill (40%) French barriques for 12-14 months. The three grape varieties are vinified separately and blended shortly before bottling. Frequent rackings have allowed for bottling without fining, physical stabilization, or filtration, which may cause slight sediment in the bottle
