Bouquet: Fresh and delicate, with notes of red fruits such as raspberry and wild strawberry, accompanied by subtle hints of citrus and white flowers, along with faint notes of yeast and bread crust, typical of long aging on the lees.
Taste: Elegant and complex, offering an extraordinary balance between acidity and structure, with a pleasant sapidity and silky bubbles. Fruity notes of raspberry and cherry emerge on the palate, balanced by a lively freshness and a minerality that prolongs the finish.

Pairings: Perfect as an aperitif, it pairs excellently with raw fish appetizers, tuna and salmon tartare, oysters, shellfish, as well as white meat dishes and grilled vegetables. Also ideal with light pasta dishes and risottos.
Terroir: This rosé is the result of Pinot Nero grapes grown in historical vineyards located on the hills of Canelli, characterized by calcareous-clay soil that contributes to the wine's minerality and structure. The optimal exposure and local microclimate favor slow and uniform grape ripening, allowing for a unique expression of the terroir.
Vinification: The grapes are harvested by hand and subjected to a short maceration to extract the pink color. Fermentation takes place using the classic method, and the wine remains on the lees for at least 36 months, during which it acquires aromatic complexity and finesse in the perlage.
