Grape Variety: Merlot
Color: Intense and deep ruby red with garnet reflections, compact and bright in the glass.
Bouquet: Complex and elegant, with notes of blackberry, black cherry, blackcurrant, and ripe plum, accompanied by hints of vanilla, cocoa, sweet tobacco, fine spices, and light toasted nuances derived from aging in barriques.
Taste: Structured, warm, and enveloping, with soft, well-integrated tannins. The palate is harmonious and persistent, characterized by ripe red fruit, sweet spices, cocoa, and a pleasant mineral vein that provides balance and depth.
Serving Temperature: 16-18°C
Pairings: Ideal with significant red meats, braised dishes, beef tenderloin, game, roasts, aged cheeses, and rich Mediterranean dishes. Also excellent with porcini mushroom risottos and autumn cuisine.
Terroir: The vineyards located in the Cadenazzo area benefit from a particularly favorable microclimate, influenced by the proximity of the Alps and the mild currents of Ticino. The mineral-rich, well-drained soils favor low yields and high aromatic concentration, contributing to the Merlot's elegant structure and complexity.
Vinification: The grapes are harvested by hand and carefully selected. After traditional fermentation in stainless steel at a controlled temperature, the wine undergoes prolonged maceration on the skins to extract color, structure, and aromas. Aging subsequently takes place in oak barriques for several months, lending complexity, softness, and spicy notes.
