Grape Variety: Merlot
Color: Intense and deep ruby red with elegant garnet reflections; clear and compact in the glass.
Bouquet: Broad and refined, with hints of black cherry, blackberry, currant, and ripe plum, accompanied by spicy notes of black pepper, cocoa, vanilla, and light balsamic and toasted nuances.
Taste: Structured, soft, and elegant, with well-integrated velvety tannins and a pleasant freshness that provides balance and persistence. On the palate, ripe red fruits, sweet spices, and light notes of licorice emerge, leading to a harmonious and persistent finish.
Serving Temperature: 16-18°C
Pairings: Perfect with red meats, braised dishes, light game, roasts, mushroom risottos, Ticinese polenta, and aged cheeses. Also excellent with structured Mediterranean cuisine and rich autumn dishes.
Terroir: The vineyards are located in the hills of Monte Ceneri, in an area characterized by mineral and well-drained soils, influenced by the mild Ticinese climate. The temperature variations between day and night favor slow and complete ripening of the Merlot, enhancing aromatic elegance, structure, and tannic finesse.
Vinification: The grapes are harvested by hand and undergo traditional fermentation in stainless steel at a controlled temperature. Maceration on the skins allows for a balanced extraction of color and aromatic substances. The wine then ages partly in steel and partly in wooden barrels, developing greater complexity and softness.
