Color: Extremely intense ebony, almost opaque, with brilliant highlights and visible viscosity in the glass.
Nose: Extremely complex and enveloping, with hints of dates, dried figs, raisins, molasses, dark honey, coffee, dark chocolate, and balsamic and spicy nuances.
Taste: A sweet wine of great concentration, silky and velvety, with a sweetness that is full yet balanced by surprising acidity. Notes of dried fruit, caramel, licorice, and warm spices emerge, with a very long finish featuring hints of varnish and roasted coffee.
Alcohol content: 15.5%
Serving temperature: 10-12 °C, served in small dessert glasses.
Pairings: Perfect on its own as a meditation wine. Pairs beautifully with dark chocolate, vanilla ice cream, panna cotta, spoon desserts, Christmas puddings, and blue cheeses such as Roquefort or Stilton.
Terroir: The Pedro Ximénez grapes are left to sun-dry (the "soleo" technique), concentrating sugars and aromas. This gives the wine its extraordinary intensity and complexity.
Winemaking: Aged for over 30 years in the traditional Solera system, in American oak barrels. The VORS ("Very Old Rare Sherry") designation guarantees a minimum average age of 30 years.
