Nose: Fresh and fruity, with notes of wild berries, ripe cherry, and plum, enriched by delicate herbaceous and spicy nuances of black pepper and sweet tobacco.
Palate: Medium-bodied and harmonious, Col di Sasso features a soft yet present tannic structure, accompanied by a lively freshness that enhances hints of red fruit and sweet spices. It closes with a long and pleasantly dry finish, typical of Tuscan wines.

Food pairings: Perfect with grilled white and red meats, pasta with meat sauce, gourmet pizzas, and semi-aged cheeses. Also ideal with Mediterranean dishes featuring grilled vegetables and spices.
Terroir: The Castello Banfi vineyards extend across the hills of Montalcino, on clay and limestone-rich soils that impart minerality and structure to the wine. The hilly location and Mediterranean climate, with hot and windy summers, favor optimal grape ripening, bestowing aromatic intensity and freshness upon the wines.
Vinification: The grapes are hand-picked and selected to ensure maximum quality. After a controlled fermentation, the wine ages for a few months in steel tanks to preserve freshness and vibrancy, enhancing the fruity and spicy characteristics of the Cabernet Sauvignon and Sangiovese grape varieties.
