Bouquet: Complex and enveloping, with notes of ripe black fruit such as blackberry and plum, accompanied by earthy hints of leather and mushrooms, as well as spicy nuances of liquorice and black pepper
Taste: Dry and structured, with dense, fine tannins that lend elegance. On the palate, flavours of blackberry jam, new leather, liquorice and pepper emerge, with a pleasant initial sweetness and a smooth, persistent finish
Serving Temperature: 16-18°C
Pairings: Ideal with grilled red meats, roasts, game and aged cheeses. It also pairs perfectly with mushroom and truffle-based dishes
Terroir: The vineyards are situated on soils characterized by "galets roulés," large pebbles that retain heat during the day and release it at night, promoting optimal ripening of the grapes. The Mediterranean climate, with hot, dry summers and mild winters, contributes to the aromatic complexity and structure of the wine
Vinification: The grapes are harvested by hand and undergo traditional fermentation in concrete tanks. Aging takes place in large oak barrels for a period ranging from 12 to 18 months, allowing the wine to develop complexity and harmony
