Nose: Complex and enveloping bouquet, with notes of ripe red fruit, cherry, and plum, accompanied by spicy nuances, vanilla, and hints of cocoa derived from aging in barriques.
Palate: Dry, structured, with elegant and persistent tannins. Well-balanced by a lively freshness and a minerality that reflects the Brissago terroir. Notes of wild berries, sweet spices, and a pleasant roundness emerge on the palate, giving the wine remarkable depth and complexity.
Alcohol content: 14.5%
Serving temperature: 16-18°C
Pairings: Pairs perfectly with grilled red meats, roasts, braised meats, game, and aged cheeses. Also ideal with mushroom and truffle-based dishes, enhancing the intense and complex flavors of autumn cuisine.
Terroir: The vineyards are located on the hills of Brissago, in an area particularly tempered by the lake, which offers ideal climatic conditions for growing Merlot. The mineral-rich soils contribute to giving the wine a marked tannic structure and a distinctive minerality.
Vinification: After cold maceration and traditional manual punch-down, alcoholic fermentation takes place in steel with long maceration. Malolactic fermentation is carried out in new barriques, followed by 22 months of aging in the same, giving the wine complexity and aromatic depth.
Description: The 00 ZeroZero TI DOC Barrique is the flagship wine of the Chiappini Giò winery, produced for the first time in 2000. It comes from the first vineyard planted twenty years ago on a plot already owned by the family's ancestors. This wine represents the essence of Ticino Merlot, fully expressing the characteristics of the Brissago terroir and the winery's winemaking experience.
