Vinification: The grapes are harvested by hand and subjected to traditional vinification, with long fermentations to best extract the aromatic and structural characteristics of the grape variety. This is followed by aging in wooden barrels for several months, which rounds out the tannins and adds complexity to the aromatic bouquet
