Nose: Elegant and complex, with deep aromas of ripe black fruit such as cherry, blackberry, and plum, enriched by spicy notes of black pepper, tobacco, leather, and delicate nuances of vanilla and licorice, derived from aging in wood.
Palate: Dry and structured, featuring soft and well-integrated tannins. The full body and long persistence are balanced by a pleasant acidity. On the palate, notes of wild berries and spices stand out, followed by hints of dark chocolate and a refined minerality that reflects the Molise terroir. The complexity of the flavor makes this wine long-lived and suitable for aging.
Serving Temperature: 16-18°C
Pairings: Pairs perfectly with red meats, game, and stewed meat dishes. Also excellent with aged cheeses and rich-flavored dishes such as ragù and roasts. Its structure makes it ideal for accompanying spicy foods or dishes with rich sauces.
Terroir: The Dimajo Norante vineyards are located in an area of Molise that enjoys a Mediterranean climate, with significant temperature variations between day and night. The soils, predominantly clay and limestone in composition, give the wine a mineral character and marked complexity.
Vinification: The harvest is manual, with careful selection of the best bunches. Fermentation takes place in stainless steel, followed by aging in oak barrels for about 12 months, during which the wine acquires its spicy characteristics and a velvety tannic structure.
