Origin: Nuits-Saint-Georges, Côte de Nuits, Burgundy, France.
Grape Variety: Pinot Noir.
Color: Intense ruby red with garnet highlights.
Nose: A complex and enveloping bouquet, with notes of ripe red fruits such as cherry and raspberry, accompanied by spicy nuances of black pepper and hints of undergrowth and licorice.
Taste: On the palate, it is dry, structured, and harmonious, with elegant and well-integrated tannins. The lively freshness and minerality reflect the character of the terroir, offering a long and persistent finish with fruity and spicy notes.
Serving Temperature: 16-18°C.
Pairings: Ideal with grilled red meats, roasts, game, and aged cheeses. It also pairs perfectly with mushroom and truffle-based dishes, enhancing the wine's earthy nuances.
Terroir: The "Les Chaillots" vineyard is located below "Les Poirets" and benefits from deposits of round pebbles (called "chailles") coming from the combe above. This soil gives the wine a fleshy structure, power, and a distinctive mineral vein.
Vinification: The grapes are harvested by hand and undergo traditional vinification, with fermentation in wooden vats and aging in French oak barriques, a portion of which are new, for a period ranging between 12 and 18 months, in order to achieve complexity and refinement.
