Origin: Pantelleria, Sicily, Italy
Grape Variety: Moscato di Alessandria (Zibibbo)
Color: Intense golden yellow with amber highlights
Nose: The aromatic bouquet is extraordinarily complex and rich, with intense scents of dehydrated apricot, candied orange peel, dried figs, and dates, enriched by floral and sweet nuances of honey and Mediterranean spices such as thyme and sage.
Palate: Sweet and enveloping, yet with a surprising freshness that balances the sweetness. On the palate, it is full-bodied, elegant, and possesses extraordinary persistence. Notes of ripe and dried fruit are present, accompanied by a long, aromatic finish that gives way to slight sensations of spice and a fine minerality.
Alcohol content: 14.5%
Serving temperature: 12/14° C
Pairings: This passito pairs beautifully with aged and spicy cheeses, foie gras, dry pastries, and desserts based on almonds, pistachios, or dried fruits. It is also ideal as a meditation wine to be enjoyed on its own.
Terroir: The Zibibbo vines grow on the volcanic soils of Pantelleria, characterized by strong minerality and richness in nutrients. The arid and windy climate, with hot and dry summers, creates ideal conditions for producing grapes with an extraordinary concentration of sugars and aromas. The alberello (bush-trained) cultivation technique, typical of Pantelleria and a UNESCO World Heritage site, provides the vine with further uniqueness and resistance.
Vinification: The grapes are harvested by hand in different stages of ripeness to ensure excellent, selected quality. After natural drying, the grapes are vinified with a slow fermentation that preserves and enriches the wine's aromatic intensity. This is followed by aging in steel for a few months to enhance the freshness and aromatic complexity.
