Grape Variety: 100% Cabernet Sauvignon
Color: Intense ruby red, with slight garnet hues that highlight the wine's evolution.
Bouquet: Rich and intense, with notes of ripe wild berries, particularly blackcurrant and blackberry, followed by delicate hints of sweet spices, black pepper, and light balsamic touches. The bouquet is further enriched by earthy notes and a pleasant component of tobacco and graphite, typical of aged Cabernet Sauvignon.
Taste: On the palate, it is full-bodied and structured, with dense yet well-integrated tannins. Freshness balances the tannic structure, lending elegance and persistence. Flavors of dark fruit and spices emerge, combined with a mineral note that gives the wine depth and character. The finish is long and enveloping, with hints of dark chocolate and licorice.
Serving Temperature: 16-18°C
Pairings: Perfect with grilled red meats, game, roasts, and aged cheeses. It also pairs well with dishes featuring porcini mushrooms and truffles, thanks to its structure and complexity.
Terroir: The vineyards of Castelnuovo Berardenga, in the southern area of Chianti Classico, benefit from soil rich in galestro and alberese, with a climate that alternates warm days with cool nights. These characteristics enhance the character of the Cabernet Sauvignon, giving the wine a complex aromatic profile and a refined tannic structure.
Vinification: The grapes are hand-harvested, followed by a long maceration to extract aromas and structure. Fermentation takes place in stainless steel, while aging occurs in French oak barriques for approximately 18-20 months, allowing the wine to develop complexity and aromatic depth.
