Nose: A complex and fascinating bouquet, dominated by ripe black fruit such as black cherries and plums, accompanied by spicy hints of black pepper, cocoa, vanilla, and delicate notes of leather and tobacco.

Palate: Velvety, structured, and powerful. On the palate, rich flavors of black fruit emerge, wrapped in soft, well-integrated tannins. A perfect balance between freshness and intensity, with a long persistence and a spicy, slightly balsamic finish.

Pairings: Pairs beautifully with grilled red meats, game, braised meats, and aged cheeses. Also perfect with traditional Puglian dishes, such as baked lamb or pork capocollo.

Terroir: The vineyards are located on red soils of calcareous origin, rich in iron oxides. The vines, grown using the alberello (bush-trained) method, benefit from strong sun exposure and agricultural management that respects the natural cycle and the unique characteristics of the soil. The Mediterranean climate, with hot, dry summers and maritime influences, promotes optimal grape ripening.

Vinification: Selected manual harvest, followed by long maceration on the skins to maximize the extraction of aromas and tannins. Controlled-temperature fermentation and aging in French oak barriques for approximately 18–24 months, which imparts complexity and roundness to the wine.
