Color: Intense ruby red with violet reflections
Nose: Elegant and complex, with notes of wild berries such as redcurrant and blueberry, followed by hints of sweet spices, black pepper, dark chocolate, and a light herbaceous touch typical of Carmenere. The bouquet is enriched by balsamic nuances and sweet tobacco.
Palate: Dry and structured on the palate, with soft and well-integrated tannins. The freshness is accompanied by a pleasant softness, with a balance between acidity and alcohol. The taste highlights notes of ripe dark fruit, chocolate, and spices, with a long and enveloping finish. The closure is elegant, with a light aftertaste of spices and cocoa.
Serving temperature: 16/18° C
Pairings: Perfect with grilled red meats, roasts, braised meats, and game. It also pairs well with structured first courses such as tagliatelle with wild boar ragu and baked lasagna, as well as aged cheeses and spicy dishes.
Terroir: The Colli Berici are characterized by calcareous-clay soil, ideal for the cultivation of red grape varieties. Carmenere, in particular, adapts well to this territory, thanks to good sun exposure and winds that favor a slow and complete ripening of the grapes. This terroir gives the wine a characteristic minerality and a good tannic structure.
Vinification: The Carmenere and Merlot grapes are hand-harvested and vinified separately. Fermentation takes place in stainless steel tanks at a controlled temperature, with prolonged maceration to best extract aromas and structure. Aging takes place in barriques for about 12 months, helping to round out the tannins and enrich the wine with vanilla and spicy notes.
