Terroir: Predominantly calcareous soils with a microclimate characterized by significant temperature fluctuations between day and night during the summer months, lending the wine distinct varietal notes
Vinification: The grapes, harvested during the coolest hours of the day, are gently destemmed and soft-pressed. The resulting must is clarified by settling and then fermented at a controlled temperature between 16-18°C in stainless steel tanks. At the end of fermentation, the wine is kept on the lees for six months without undergoing malolactic fermentation, to preserve freshness and savoriness
