Terroir: This Merlot is grown on clay-rich calcareous soils, located on hillsides with a southwest exposure, protected from northern winds. The vines, often quite old, sink their roots into mineral-rich soils, benefiting from climatic conditions that alternate hot summers with cool nights, favoring a slow and gradual ripening of the grapes
Vinification: The grapes, harvested at optimal ripeness at the end of September, after significant selection carried out in August, are destemmed and concentrated via saignée. Fermentation takes place in stainless steel tanks, followed by malolactic fermentation and 20 months of aging in French barriques
