Color: Deep ruby red with violet reflections, typical of a young, structured Barbera.
Bouquet: Intense aromas of ripe red fruit such as cherry and blackberry, with delicate spicy notes of black pepper, cocoa, and hints of vanilla from wood aging. In the background, light scents of leather and tobacco emerge.
Taste: This Barbera is powerful and concentrated, with a significant, soft tannic structure. The palate reveals a perfect balance between lively acidity and ripe red fruit, with a long, slightly savory finish that leaves a pleasant sensation of freshness. Notes of dark chocolate and a touch of licorice can be perceived.
Serving temperature: 16/18°C
Pairings: Excellent with grilled red meats, roasts, game, and flavor-rich dishes such as braised meats and stews. It also pairs well with aged cheeses and truffle-based first courses, as well as porcini mushrooms and grilled vegetables.
Terroir: The Bionzo vineyards are located on calcareous and clay soils with good sun exposure, which promotes optimal grape ripening and gives the wine a particular minerality and depth. The Bionzo area, in the heart of Piedmont, is renowned for the production of high-quality Barbera thanks to its ideal microclimate and significant temperature fluctuations.
Vinification: Harvesting is manual, and the grapes undergo a long fermentation to enhance the varietal's aromatic characteristics. Aging takes place in oak barrels for about 18 months, adding complexity and intensity to the tannins and aromas.
