Nose: The bouquet is intense and complex, characterized by notes of ripe red fruits such as cherry and blackberry, accompanied by floral hints of violet and light spicy nuances of black pepper and licorice.
Taste: On the palate, it is dry, full-bodied, and well-balanced. The tannins are present but soft, with good acidity that provides freshness. Flavors of red fruit emerge, with a slight balsamic note and a pleasant mineral persistence.
Alcohol content: 13.5%
Serving temperature: 16-18°C
Pairings: Ideal with grilled red meats, roasts, aged cheeses, and traditional Tuscan dishes such as ribollita and wild boar stew. Also perfect paired with platters of cured meats and Tuscan pecorino cheeses.
Terroir: The vineyards are located on clayey and calcareous soils, which give the wine a distinct minerality. The area's climate, characterized by hot summers and mild winters, favors optimal ripening of the Prugnolo Gentile, developing elegant tannins and good natural acidity.
Vinification: The grapes are harvested by hand. Fermentation is traditional, with a long maceration period to best extract the colors and flavors of the grape variety. After fermentation, the wine is aged for 12 months in wooden barrels, followed by additional months in the bottle to ensure greater harmony of flavors.
