Taste: Elegant and harmonious, with a full structure and silky tannins, well-balanced by a vibrant freshness and a slight acidity typical of Barbera. On the palate, there are persistent hints of wild berries, accompanied by a long finish with earthy and spicy notes that make the wine enveloping and complex.
Serving Temperature: 16-18° C
Pairings: Ideal with meat dishes such as roasts, braised meats, and game, as well as aged cheeses and flavorful first courses based on truffles or porcini mushrooms. It also pairs well with traditional Piedmontese dishes such as agnolotti with meat sauce and bollito misto.
Terroir: The Nebbiolo and Barbera grapes for this Monferrato DOC grow in vineyards on clayey and calcareous soils, benefiting from the cool breezes and the microclimate of the Monferrato. These conditions allow for optimal ripening of the grapes, enhancing their acidity and aromatic complexity, making the wine particularly suitable for aging.
Vinification: Vinification takes place through controlled-temperature fermentation and a long maceration to extract the maximum amount of aromatic and structural components. The wine subsequently matures in French oak barrels for approximately 18-20 months, imparting further structure and complexity to the aromatic bouquet.
