Palate: Elegant and concentrated, with flavors of yellow fruit, linden blossom, and a touch of ginger. Excellent balance between fruit and acidity, with a long finish and mineral notes.
Serving temperature: 10-12°C
Pairings: Ideal with fondue, raclette, perch fillets, vegetable terrines, sushi, and cheese crostini.
Terroir: This wine comes from the historic terraces of Dézaley, a Grand Cru of Lavaux, characterized by clay-limestone soils and a favorable microclimate thanks to the proximity of Lake Geneva. The vines, grown on steep slopes, are exposed to a triple heat source: direct sun, reflection from the lake, and heat retained by the stone walls.
Vinification: The Chasselas grapes are harvested by hand and undergo soft pressing. Fermentation takes place in steel to preserve aromatic freshness, followed by aging on fine lees to add complexity and structure to the wine.
