Origin: Negrar, Valpolicella, Veneto, Italy
Grape Variety: Corvina, Corvinone, Rondinella and other indigenous varieties in small percentages
Color: Intense ruby red with garnet reflections, tending towards garnet with aging
Nose: Rich and complex aromas, ranging from ripe red fruit, such as black cherry and plum, to notes of dried fruit, figs, cocoa, and sweet spices like cinnamon and vanilla. A balsamic undertone emerges, adding further depth.
Palate: Sweet and velvety, with an enveloping structure and soft, well-integrated tannins. The taste is characterized by a perfect balance between the sweetness of ripe fruit and acidity, with persistent notes of dark chocolate, dried plums, and slight nuances of roasted coffee.
Alcohol content: 13.5%
Serving temperature: 14-16°C
Pairings: Ideal with aged cheeses, especially blue cheeses, and dark chocolate-based desserts. Also perfect as a meditation wine, it can accompany chocolate desserts or dry pastries.
Terroir: The hills of Valpolicella offer limestone and clay soil, ideal for the aromatic concentration of the indigenous grape varieties. The climatic conditions, with significant temperature fluctuations between day and night, contribute to slow ripening and extraordinary flavor complexity.
Vinification: The grapes are dried for several months in well-ventilated rooms, promoting a natural concentration of sugars. Subsequently, they are vinified with a long fermentation that allows for the extraction of the full aromatic complexity of the Recioto. The aging takes place in oak barrels for several years, which bestow elegance and structure.
