Bouquet: Intense and complex aromas, dominated by notes of tropical fruit such as mango and papaya, accompanied by hints of citrus, white flowers, and a touch of aromatic herbs, with a delicate mineral finish.
Taste: Dry, fresh, and highly elegant, with a balanced structure and a marked acidity that provides freshness. Flavors of exotic fruit and citrus emerge on the palate, supported by a persistent minerality that reflects the Alto Adige terroir.
Serving temperature: 10/12°C
Pairings: Ideal with fish-based dishes, crustaceans, and shellfish, but also pairs perfectly with fresh cheeses and vegetable appetizers. Excellent with asparagus risotto and light poultry dishes.
Terroir: This Sauvignon Blanc grows on gravelly and calcareous soils in Alto Adige, which give the wine its characteristic minerality and freshness. The region's microclimate, characterized by significant temperature variations between day and night, favors the development of varietal aromas and the balance of the wine.
Vinification: The grapes are harvested by hand and carefully vinified, with a slow fermentation in stainless steel and aging on the fine lees for 12 months. This process helps to develop complexity and aromatic depth while maintaining the freshness of the grape variety.
