Grape variety: Merlot from old vines.
Color: Intense ruby red with violet reflections.
Nose: Complex aromas of ripe dark fruit, such as blackberry and plum, with spicy notes of black pepper and hints of leather.
Palate: Structured and opulent on the palate, with well-integrated tannins and an acidic vein that provides freshness. Flavors of black fruit, spices, and a slight mineral hint are perceptible, reflecting the calcareous-sandy terroir of Castel San Pietro.
Serving temperature: 16-18° C.
Pairings: Ideal with grilled red meats, roasts, game, and aged cheeses. It also pairs well with mushroom and truffle-based dishes.
Terroir: The grapes come from vineyards located on sandy-calcareous soils in Castel San Pietro, in the Mendrisiotto region, with a south/south-west exposure at an altitude between 350 and 450 meters. The region's climate, characterized by hot summers and cool nights, favors optimal grape ripening, giving the wine complexity and structure.
Vinification: Vinification follows traditional methods with spontaneous fermentations and semi-carbonic macerations. The wine matures for 15 months in Burgundy barrels, 20-30% of which are new, contributing to the aromatic complexity and tannic structure.
