Origin: Castel San Pietro and Trevano, Canton Ticino, Switzerland
Grape variety: Merlot
Color: Intense ruby red, unfiltered, with slight opalescence
Nose: Refined bouquet with notes of cherry, black cherry, violet, plum, and blackberry; in the background, delicate nuances of cocoa, black pepper, cloves, and light toasted notes.
Taste: On the palate, it is fresh and elegant, with velvety tannins and a lively acidity that provide balance and pleasantness. The harmonious structure and aromatic persistence make it a Merlot of great finesse.
Serving temperature: 16-18°C
Pairings: Ideal with meat dishes, such as rabbit with polenta, game, ragù, lasagna, and vegetarian specialties. It also pairs well with flavorful fish such as monkfish and salmon.
Terroir: The vineyards are located on sandy soils: granitic in the Malcantone region and limestone in the Mendrisiotto area, with a south/south-west exposure at an altitude between 350 and 450 meters. The vines, aged between 30 and 70 years, benefit from a favorable microclimate that contributes to the optimal ripening of the grapes.
Vinification: The grapes are hand-harvested and spontaneously fermented with indigenous yeasts. Semi-carbonic maceration takes place in 20 hl fiberglass tanks, followed by 8 months of aging in used Burgundy pièces, without filtration and with minimal sulfites added only at bottling.
