Origin: Castello della Sala, Orvieto (Umbria), Italy
Grape Variety: Chardonnay with a small portion of Grechetto (the estate's historic blend)
Color: Pale straw yellow with greenish highlights
Nose: Elegant and layered: pink grapefruit and citrus, elderflower and chamomile; then vanilla and that typical mineral "flint" trail (the signature of Chardonnay from Castello della Sala).
Palate: Taut and precise, with great finesse: hints of toasted almond, white pepper, and ginger; a savory texture, freshness, and momentum, with a clean and persistent finish that invites evolution in the bottle.
Alcohol content: 12.5%
Serving temperature: 10-12°C
Pairings: Perfect with risotto (including mushroom risotto), pasta with white sauces, grilled or baked fish, shellfish, white meats, noble poultry, and medium-aged cheeses.
Terroir: Vineyards of Castello della Sala (about 18 km from Orvieto) at an altitude between 220 and 470 m a.s.l.; Pliocene-era soils, tending to be clay-limestone and rich in marine fossils, with excellent diurnal temperature variations: ideal conditions for energetic, savory, and long-lived white wines.
Vinification: Harvested in the very early hours of the morning; brief skin maceration at 10 °C (~4 hours) and clarification; fermentation in barriques with partial malolactic fermentation for the Chardonnay. In February, it is blended with Grechetto, which is vinified separately without oak, followed by a few months of bottle aging.
Description: Cervaro della Sala confirms the "iconic" style of the estate: an Italian white wine born with the ambition to challenge time, capable of combining the richness of Chardonnay with the Mediterranean finesse of Grechetto. Thanks to gradual ripening and significant temperature variations, it offers a crisp and complex aromatic profile, with citrus, flowers, and the classic flint signature. On the palate, it is energetic yet composed, with precise savoriness and a long, clean finish, already enjoyable today but designed to evolve with grace.
