Grape Variety: Nero di Troia (primarily) and other native varieties
Color: Intense ruby red with garnet highlights
Nose: Complex and rich, with notes of ripe wild berries, such as blackberry and cherry, enriched by nuances of sweet spices, tobacco, and light hints of leather, a sign of long aging in oak barrels.
Palate: Robust and structured, with soft and well-integrated tannins that balance perfectly with good freshness and a light mineral sapidity. The finish is persistent, with an aftertaste of ripe red fruit and spicy hints that enhance the complexity of the Nero di Troia.

Serving Temperature: 16-18°C
Pairings: Ideal with grilled red meat, roasts, braised meats, game, and aged cheeses. Also excellent with hearty first courses, such as pasta with meat ragù, or dishes featuring mushrooms and truffles.
Terroir: The vineyards are located on the hills of Castel del Monte, characterized by calcareous soils and a breezy climate, which allows the grapes to reach optimal ripeness while maintaining excellent acidity. These soils lend the wine a mineral note, providing complexity and excellent aging potential.
Vinification: The grapes are hand-harvested and undergo traditional vinification with temperature-controlled fermentation. After malolactic fermentation, the wine ages in large oak barrels for 14-16 months, followed by further bottle aging, which rounds out the tannins and enriches the bouquet.
