Grape variety: Grillo, Catarratto, Inzolia
Color: Deep gold with copper highlights.
Bouquet: A broad aroma of toasted hazelnut and pine nuts joins pleasant hints of orange zest and light honeyed notes.
Palate: Intense, persistent, warm, and smooth, with a pleasant savory finish.
Flavor: Dry and fresh, with spicy notes and hints of toasted almond, hazelnut, and pine nuts.
Alcohol content: 19%
Serving temperature: 12-14° C
Pairings: To be enjoyed at a temperature of 16-18°C with sesame cookies or dark chocolate. Served at a temperature of about 14°C, it is also ideal paired with oysters and smoked fish.
Terroir: Soil: medium-textured, slightly clayey.
Altitude: 100 to 200 meters above sea level.
Climate: Mediterranean, mild winters, limited rainfall, very hot and breezy summers.
Vinification: Harvested during the second ten days of September, at advanced ripeness. Fermentation at 20°-22°C. Fortified with pure wine alcohol until the optimal alcohol content is reached.
Aged using the Soleras method for over 5 years in 100, 80, and 50hl oak barrels.
