Color: Intense ruby red with garnet reflections
Nose: Complex and enveloping, with notes of ripe red fruit such as cherry and plum, accompanied by spicy nuances and hints of tobacco and cocoa.
Palate: Dry, structured, with elegant and persistent tannins. Flavors of wild berries emerge on the palate, with a pleasant freshness and minerality that reflects the Malcantone terroir.
Serving temperature: 16-18°C
Pairings: Pairs well with grilled red meats, roasts, game, and aged cheeses. Also excellent with mushroom and truffle-based dishes.
Terroir: The vineyards are located in the Malcantone, characterized by rich soils and a favorable microclimate that contribute to the wine's complexity and minerality.
Vinification: The grapes, cultivated according to biodynamic principles, are hand-harvested. Fermentation takes place with indigenous yeasts in barriques, followed by aging in wood for periods that can last up to 3-4 years, giving the wine depth and complexity.
Description: The 2015 Zündel Merlot is a refined expression of Ticino Merlot, reflecting the producer's biodynamic philosophy. On the nose, it offers a complex bouquet of ripe fruit and spices, while on the palate it is structured and harmonious, with remarkable persistence.
