Bouquet: Intense aromas of violet, rosemary and blueberries, with notes of incense, elderberry and lavender
Taste: Structured and velvety, with fine, elegant tannins. On the palate, flavors of blackcurrant and plum emerge, with hints of cedar, black tea and chocolate.
Serving temperature: 17-18°C
Pairings: Ideal with red meats, lamb, poultry and game.
Terroir: Vineyards located on sandy and stony soils in the hills of Panquehue, in the Aconcagua Valley. The semi-desert climate, with warm days and cool nights, promotes optimal grape ripening.
Vinification: The grapes, grown according to organic farming principles, are harvested by hand in the early morning. Vinification involves temperature-controlled fermentation, followed by aging for 18 months in French oak barrels and at least 12 months in the bottle.
Description: Carabantes is a tribute to Francisco de Carabantes, the Dominican friar who introduced the grapevine to Chile in the 16th century. This wine best expresses the characteristics of Chilean Syrah, with floral and fruity aromas, an elegant structure and an aging potential of 10-12 years.
