Grape Variety: Timorasso
Color: Straw yellow with golden reflections
Aroma: Complex and enveloping, with well-defined mineral notes accompanied by hints of citrus, pear, wildflowers, and slight hydrocarbon nuances.
Taste: Dry, structured, and savory. On the palate, the freshness and minerality stand out, reflecting the unique terroir of the Colli Tortonesi. Notes of exotic fruit, citrus, and almond blend into a long and pleasant finish.
Serving Temperature: 10-13° C
Pairings: Perfect with fish-based dishes, crustaceans, seafood risottos, and fresh cheeses. Also excellent with seafood salads, fish tartare, and sushi.
Terroir: The vines are grown on marly-calcareous soils at an altitude between 350 and 400 meters, with south/west and south/east exposure. The terroir, particularly well-suited to Timorasso, gives the wine a marked freshness and minerality.
Vinification: The grapes are destemmed and pressed gently. Fermentation takes place in small stainless steel tanks at a controlled temperature, followed by aging on the fine lees for about 8 months. Subsequently, the wine rests in the bottle for an additional 3 months before being released to the market.
