Origin: Alaric Mountains, Corbières, Languedoc-Roussillon, France
Grape Variety: Syrah (25-year-old vines), Carignan (60-year-old vines), Grenache (30-year-old vines)
Color: Intense ruby red with violet reflections
Nose: Notes of ripe black fruit, such as blackberry and blackcurrant, accompanied by hints of licorice and spicy nuances
Palate: On the palate, it is fleshy and intense, with silky tannins and a surprising freshness; the finish is long and delicately mentholated
Serving temperature: 15°C; decanting before serving is recommended
Pairings: Ideal with grilled red meats, roasts, stews, and aged cheeses such as aged Cantal
Terroir: Vineyards located on gravelly slopes with clay-limestone soils and marl, at the foot of the Alaric Mountains
Vinification: Fermentation in stainless steel and concrete tanks using indigenous yeasts; gentle maceration for 28–30 days
Aging: 12 months in barriques with bâtonnage of fine lees, followed by a period in tanks; bottled unfined and unfiltered
