Origin: Normandy, France – Calvados Domfrontais Appellation (Domfront area, characterized by the use of pears alongside apples).
Raw material: Cider obtained from apples and pears (at least 30% pears, as per the Calvados Domfrontais specifications).
Color: Bright gold with amber hues.
Nose: Elegant and complex, with apple and pear highlighted; light spicy notes of cinnamon and vanilla, enriched by touches of mint and sweet wood.
Taste: Soft and round, with a balance between fruity sweetness and spicy warmth; apple and pear return on the palate, with a long, slightly woody finish.
Alcohol content: 42%.
Serving temperature: 8–10 °C as an aperitif or “Trou Normand”; also excellent at room temperature as a digestif.
Pairings: Ideal to drink neat, paired with apple or chocolate desserts, soft and aged cheeses, or as an ingredient for refined cocktails.
Terroir: The Domfront region is characterized by mixed orchards of apples and pears, with clay and limestone soils that impart freshness and complexity to the base cider. Aging takes place in oak barrels, often previously used, which allow the fruit to express itself without being overpowered by the wood.
Production: Distillation of apple and pear cider, followed by a minimum aging of 3 years in oak barrels. A portion also matures in new barriques (about 25%) to enrich the aromatic bouquet.
