Origin: Volnay, upper part of the Côte de Beaune slope, in Burgundy (Côte‑d’Or and Saône‑et‑Loire departments), typically between 290 and 500 m above sea level. Limestone-clay soils with a cool, breezy exposure, France.
Grape variety: Chardonnay
Color: Brilliant straw yellow with golden highlights, typical of high-altitude productions.
Nose: Complex and fragrant: notes of white flowers (jasmine, acacia), citrus (lime, lemon zest), white-fleshed fruit (apple, pear), floral jellies (hawthorn), with hints of alpine herbs and light tones of toasted almond.
Palate: Fresh and lively on the palate, with evident minerality (calcareous salts) and balanced acidity. Hints of apple, butter, lime, and hazelnut, with a harmonious structure and elegant persistence, sometimes with pleasant softness and medium body.
Serving temperature: 8-10° C
Pairings: Ideal with fish-based dishes (salmon, sole), carpaccio, shellfish, asparagus, delicate salads, risottos, and fresh cheeses. Also perfect with fish curry and salads enriched with citrus or herbs.
Terroir: The vineyards, located on plateaus and cool slopes, benefit from solid clay-limestone soils and a temperate continental climate with significant diurnal temperature variation. The altitude favors slow ripening, aromatic freshness, and a marked minerality.
Vinification: Soft pressing, temperature-controlled fermentation in stainless steel (sometimes a small fraction in wood). Some producers age the wine for about 10 months on fine lees to enrich its texture and complexity.
