Origin: Guyana, Demerara River region – Demerara Distillers Ltd. Distillery (Diamond Distillery).
Raw material: Sugarcane molasses fermented and distilled in a combination of unique stills: the Enmore Wooden Coffey Still, Diamond Coffey Still, and Port Mourant Double Wooden Pot Still.
Color: Deep amber with intense copper highlights.
Nose: Elegant and complex, with notes of ripe tropical fruit, plum, and dates, honey, and dark brown sugar. Nuances of vanilla, caramel, coffee, and dark spices emerge.
Palate: Smooth, rich, and enveloping. On the palate, aromas of marzipan, candied cherry, dates, and cinnamon stand out, with accents of cloves and ripe papaya. Long, sweet, yet well-balanced finish with a spicy, velvety conclusion.
Alcohol content: 40%
Serving temperature: 18–20 °C, to be enjoyed neat, on the rocks, or in refined cocktails.
Pairings: Excellent as a sipping rum. Pairs perfectly with dark chocolate, cigars, spiced desserts, and dry pastries. Also ideal in classic cocktails like the Rum Old Fashioned or the Mai Tai.
Terroir: Aged along the Demerara River in ex-bourbon barrels under a tropical climate. The hot, humid environment accelerates maturation and enriches the rum with complexity, depth, and aromatic roundness.
Production: A blend of rums aged for at least 12 years. Molasses fermentation for approximately 26 hours and distillation using both traditional and modern stills. Refined in American oak ex-bourbon barrels, which impart softness, spices, and unique character.
