Origin: Japan, Kyoto

Raw materials: Neutral rice spirit and ultra-pure water from the famous Fushimi district.

Color: Clear and crystalline.

Nose: Intense, powerful, and finely balanced. Marked notes of fresh juniper and citrusy Yuzu peel emerge, followed by spicy nuances of ginger and a delicate herbaceous trail of Gyokuro green tea.

Taste: On the palate, it reveals itself to be full-bodied, dense, and with great alcoholic depth, yet incredibly smooth. The initial impact of juniper blends with the freshness of Japanese citrus, then gives way to warm notes of Sansho pepper and ginger. The finish is very long, clean, warm, and persistently aromatic.

Alcohol content: 54.5% vol.

Serving temperature: Adjustable based on service: perfect at room temperature for sipping neat, or chilled with clear ice in mixed drinks.

Pairings: Ideal for high-end mixology. It dramatically elevates classic cocktails like the Gin Tonic (paired with a neutral premium tonic and a zest of Yuzu or grapefruit) and the Martini Cocktail, thanks to its exceptional aromatic intensity and structured proof. KI NO BI SEI is not just a meditative spirit, but a formidable ally at the table when served neat (slightly chilled) or in a very dry Martini Cocktail. It finds its ideal pairing with high-end Japanese cuisine, particularly with fatty tuna (Otoro) or salmon sashimi, where the high alcohol content instantly cleanses the fattiness of the fish, while the Yuzu and Sansho pepper enhance its aromatics. It is extraordinary when paired with umami-rich dishes like pork gyoza, crispy shrimp and vegetable tempura, or lacquered meat dishes like duck a l'orange, where it contrasts with the sweetness of the sauce. For a surprising Western experience, experiment with fresh raw oysters, caviar, or strong blue cheeses like Roquefort and pungent Gorgonzola: the creaminess of the cheese is perfectly cut by the power of the rice and juniper.

Terroir / Botanicals: Handcrafted in Kyoto, it uses 11 indigenous botanicals divided and distilled into 6 distinct categories ("Elements"): Base (Juniper, Iris, Hinoki), Citrus (Yuzu, Lemon), Spice (Ginger), Fruit & Floral (Shiso, Bamboo), Herbal (Gyokuro Green Tea), and Spice/Seasoning (Sansho Pepper).

Distillation: A fractional distillation process unique in the world: the 6 botanical categories are macerated and distilled separately in rice spirit before being blended. The final blend is cut with the famous Fushimi groundwater and left to rest to allow for the perfect fusion of elements.

Description: KI NO BI SEI is a celebration of the power and harmony of Japanese distilling tradition. A full-proof version (54.5%) of the famous original Kyoto Dry Gin, it is bottled at the traditional "Navy Strength" level to maximize the concentration of essential oils from the local botanicals. The rice spirit lends a unique softness and creaminess that supports the high alcohol volume without ever appearing sharp or aggressive. Each sip is a sensory journey through the gardens and forests of Kyoto: the citrus elegance of Yuzu and the balsamic nature of Hinoki wood create an unmistakable aromatic profile, designed for the most demanding bartenders and enthusiasts seeking a spirit of absolute rigor and character.

Classification: Kyoto Dry Gin / Artisanal Spirit Premium

Type: Gin (Navy Strength / Full Proof)

Allergens: Free from common allergens (Gluten-free thanks to the rice spirit distillation process).

Awards and ratings: The Gin Masters (The Spirits Business): "Master" Medal (highest honor) in the Ultra Premium and Navy Strength categories.
IWSC (International Wine & Spirit Competition): Gold Medal Outstanding.

Philosophy: Artisanal production using local ingredients with a very short supply chain.
