Nose: Elegant and delicate, with aromas of small red fruits such as cherry, raspberry, and redcurrant, accompanied by light floral notes of violet and a subtle spiciness reminiscent of white pepper and tea leaves.
Palate: Fresh and medium-bodied, with fine, well-integrated tannins. On the palate, it stands out for a perfect balance between acidity and softness, with a persistent finish featuring fruity and mineral notes. The expression of the Hautes-Côtes terroir is clear: vibrant, refined, and authentic.
Serving temperature: 14-16° C
Pairings: Ideal with white meat dishes, light roasts, poultry, delicate charcuterie, soft cheeses, and vegetarian dishes based on mushrooms or truffles. Also excellent with risottos and refined first courses.
Terroir: The vines grow at high altitudes in the vineyards of the Hautes-Côtes de Beaune, an area that benefits from a cool microclimate and clay-limestone soils, ideal for Pinot Noir. This terroir imparts elegance, freshness, and a beautiful mineral tension to the wine.
Vinification: The grapes are harvested by hand, followed by complete destemming and temperature-controlled fermentation with maceration for approximately 10-15 days. The wine is then aged for 10-12 months in French oak barrels, a mix of new and second-fill.
