Vinification: The grapes are hand-selected. After gentle destemming without crushing, the berries are broken by pumping. This is followed by a 12-hour pre-fermentation maceration and alcoholic fermentation in temperature-controlled tanks with selected yeasts. Malolactic fermentation completes the process, with cold physical stabilization
