Nose: A broad and enveloping bouquet, characterized by notes of ripe red fruit, such as cherry and raspberry, with delicate nuances of Mediterranean spices, rosemary, and a hint of black pepper and licorice.
Palate: Full and round on the palate, with soft and well-integrated tannins. The taste is enriched by nuances of red fruit and sweet spices, balanced by a lively freshness that makes it pleasantly harmonious. Long finish, with a pleasant persistence of fruity aromas and a mineral touch that reflects the sandy soils of the region.
Serving Temperature: 16/18° C
Pairings: Ideal with grilled red meat dishes, roast lamb, suckling pig, game, and aged traditional Sardinian cheeses. Also perfect with spicy dishes and cured meats, enhancing the typical character of Mediterranean cuisine.
Terroir: The Cannonau by Su’ Entu is grown on the sandy and calcareous soils of the hilly area of Sanluri, characterized by a mild and windy climate that favors the concentration of aromas and a soft tannic structure. The exposure to the Sardinian sun, together with a constant sea breeze, contributes to creating a wine of great elegance and depth.
Vinification: After manual harvesting, the grapes undergo maceration at a controlled temperature to best extract the varietal characteristics of the Cannonau. This is followed by maturation in oak barrels which softens the tannins and enriches the wine with spicy and toasted notes, without overpowering the fruity profile typical of the grape variety.
