Origin: Sanluri, Sardinia, Italy
Grape Variety: 100% Vermentino
Color: A straw-yellow with good density and great vibrancy, with reflections that hint at pale gold.
Nose: The nose is complex and elegant: it entices with hints of ripe yellow-fleshed fruit, such as nectarine and juicy cantaloupe, nuances of pineapple, and touches of candied citrus peel, all framed by sensations of orange blossom and white freesia, with notes of white pepper.
Taste: On the palate, it opens with a sumptuously soft sip that gradually reveals its firm freshness and invigorating salinity, which extends the aromas of mango, lemon curd, and ginger.
Serving Temperature: 12-14°C
Pairings: Tèrruas Vermentino Superiore pairs well with first courses such as tagliatelle with duck ragu and Marmilla chickpea soup, and with main courses like baked John Dory with potatoes or white vegetables cooked in butter.
Terroir: Sandy loam composition with the presence of limestone. 260 meters above sea level with dual North and South exposure.
Vinification: Once harvested, the grapes are chilled to a temperature of 8-10°C and processed the following day to preserve the aromas present in the skins.
Pressing is done with whole bunches, without crushing or destemming, with a must yield of less than 55%. For the production of Tèrruas Vermentino, only the free-run must—the most prized portion—is used; it is left to rest for 72 hours to undergo a process called cold stabilization, where the berry components are resuspended daily to ensure the product’s future organoleptic stability.
Subsequently, it is clarified by static cold decantation for another 48 hours, then racked and fermented at 14 degrees for about two weeks. Halfway through fermentation, 20% of the mass is transferred into 500-liter French oak tonneaux, where it completes the fermentation process and rests for up to 2 weeks before bottling. The remaining 80% of the mass is aged in steel on fine lees, where it is subjected to bâtonnage once a week. After bottling, the wine ages in the bottle for approximately 5 months.
Description: Tèrruas Vermentino is one of the two new releases from the Su’ Entu winery: a Vermentino di Cagliari DOC Superiore, a newly established denomination in the Sardinia region, and the crown jewel of the Sanluri-based company’s production alongside Tèrruas Cannonau.
