Nose: Delicate aromas of white flowers, such as acacia and hawthorn, accompanied by notes of white peach.
Palate: Lively, fresh, and powerful on the palate, with notes of white peach and citrus, and a pleasant roundness.
Serving Temperature: 8-10°C
Pairings: Ideal as an aperitif, it pairs perfectly with oysters, smoked salmon, or aged Parmesan.
Terroir: The grapes come from Premier Cru vineyards located in Chigny-les-Roses, Ludes, Sermiers, and Mailly, in the Montagne de Reims. This area is characterized by a cool microclimate that gives the wine a lively acidity and distinctive freshness.
Vinification: The grapes are hand-picked and undergo soft pressing. Alcoholic fermentation takes place at 17°C, followed by malolactic fermentation in temperature-controlled stainless steel tanks. The wine matures for at least 30 months in traditional chalk cellars, with a final dosage of 9 g/l.
