Grape Variety: Chardonnay
Color: Bright pale yellow with golden and green reflections; fine, persistent perlage.
Aroma: Intense aromas of fresh fruit such as ripe lemon, juicy pear, and freshly picked peach, followed by floral notes of white blossoms and a light spiciness of ginger and pink peppercorns.
Taste: On the palate, a balance between tension and roundness, with an enveloping texture. Fresh notes of ripe citrus and exotic fruit are perceived, supported by a delicate minerality and persistent freshness.
Serving Temperature: 6-8°C
Pairings: Ideal as an aperitif and to accompany fish and seafood dishes, such as scallop carpaccio or sea bream tartare. It also pairs well with light poultry dishes and fresh cheeses.
Terroir: The grapes come primarily from the Premier Crus of the Côte des Blancs and the Montagne de Reims, with contributions from the Sézannais and the Vallée de la Vesle, reflecting the richness and diversity of the Champagne terroirs.
Vinification: Manual harvest, alcoholic fermentation in temperature-controlled stainless steel tanks, followed by malolactic fermentation. Aging on lees for 2-3 years. Dosage of 7 g/L.
