Bouquet: Fruity bouquet with predominant notes of cherry and wild berries, accompanied by spicy nuances and hints of aromatic herbs
Taste: On the palate, it is dry and fresh, with soft tannins and good acidity. The fruity flavors integrate with a light spicy note, offering a balanced and persistent finish
Alcohol content: 12% vol.
Serving temperature: 16-18°C
Pairings: Ideal with Ticino cuisine dishes, such as polenta and braised beef, local cured meats, and medium-aged cheeses. It also pairs well with white meats and mushroom-based dishes
Terroir: The vineyards are located on well-exposed and ventilated hillside terrain, with soil that is not very fertile and dry, ideal for cultivating Bondola. The altitude varies between 200 and 600 meters above sea level
Vinification: The grapes are harvested by hand between late September and early October. After crushing and destemming, the must ferments in contact with the skins for about 7-8 days, encouraging good aroma extraction. Aging takes place in stainless steel tanks to preserve the wine's freshness
