Nose: Intense and complex, characterized by notes of ripe red fruits such as cherry and plum, enriched by spicy nuances of black pepper and earthy hints of forest floor, accompanied by a delicate touch of Mediterranean aromatic herbs.

Taste: On the palate, it is warm and enveloping, with ripe tannins and a velvety structure. It shows good persistence, supported by a pleasant freshness that balances the wine's body. The flavors recall red fruits, with a long and harmonious finish that reveals balsamic and spicy nuances.

Serving temperature: 16-18° C

Pairings: Ideal with grilled red meats, roasts, game, hearty pasta dishes, and aged cheeses. It also pairs perfectly with traditional Sardinian dishes such as suckling pig (porceddu) and aged Sardinian pecorino.

Terroir: The grapes come from vineyards located in the hills of the Marmilla region, characterized by calcareous-clay soils and a warm Mediterranean climate with significant diurnal temperature variations. This terroir gives the wine a solid tannic structure and a freshness that supports its balance and elegance.

Vinification: The grapes are harvested by hand and undergo prolonged maceration to enhance the color and structure of the Bovale. Fermentation takes place in stainless steel tanks, followed by aging in oak barrels for several months, which imparts aromatic complexity and softness to the palate.
