Vinification: The grapes are hand-harvested and whole-cluster pressed. Alcoholic fermentation takes place at 17°C, followed by malolactic fermentation in temperature-controlled stainless steel vats. The wine matures on the lees for at least 30 months in traditional chalk cellars, with a dosage of 9 g/l.
