Origin: Isle of Islay, Scotland – Caol Ila Distillery (Port Askaig)
Raw material: Malted barley (partially peated), spring water, yeast
Color: Pale straw with golden reflections
Nose: Fresh and complex, with citrus, green apple, almond, iodine, and light peat smoke
Palate: Soft and balanced, with initial sweetness, coastal smoke, vanilla, oak, sea salt, and citrus; long finish with light ash and iodine notes
Alcohol content: 43% vol.
Serving temperature: 8/12 °C – tulip glass or Glencairn
Pairings: Smoked seafood, oysters, lobster, mild aged cheeses, white meats; excellent for meditation
Terroir: Marine and windy Islay climate, location on the sound between Islay and Jura which imparts a saline and iodine character
Maturation: Distilled in copper pot stills, aged 12 years in American oak ex-Bourbon barrels, chill-filtered
