Terroir: The Merlot grapes come from the Sottoceneri region, characterized by a mild climate and soils favorable to viticulture, lending the wine freshness and minerality
Vinification: The white free-run must of red Merlot grapes is obtained through partial destemming and crushing, followed by a very soft pressing. Fermentation takes place in stainless steel tanks at a controlled temperature of 18-20°C. To maintain freshness and savoriness, the wine does not undergo malolactic fermentation
