Origin: Reims, Champagne, France.
Grape Variety: Grand Cru Chardonnay (primarily from the Côte des Blancs: Cramant, Avize, Chouilly, Le Mesnil-sur-Oger; and the Montagne de Reims: Sillery) and red-vinified Grand Cru Pinot Noir
Color: Delicate pink with raspberry reflections.
Nose: Spicy notes of cinnamon, nutmeg, and ginger, accompanied by citrus aromas of blood orange and kumquat; followed by floral hints of violet and peony, with iodized notes of oyster.
Taste: Enveloping and silky attack with notes of tart red fruits such as pomegranate and redcurrant; smooth and saline palate; intense finish supported by a delicate bitterness and fine effervescence.
Serving temperature: 10-12°C.
Pairings: Perfect with shellfish such as lobster and shrimp, tuna tartare, sushi, duck-based dishes, and foie gras. It also pairs well with bloomy rind cheeses like Brie.
Terroir: The vineyards are located in the finest crus of Champagne, with chalky soils that impart freshness, elegance, and a unique minerality to the wine. The cool climate allows for slow ripening of the grapes, enhancing their complexity and acidity.
Vinification: The wine is produced using the saignée technique, which involves a brief maceration of the Pinot Noir to obtain the desired color. Maturation takes place for at least 9 years on the lees, contributing to extraordinary aromatic complexity.
