Bouquet: Elegant and complex, with intense scents of ripe red fruits such as cherry and blackberry, spicy notes of black pepper, and slight hints of tobacco and leather.
Taste: On the palate, it is dry and structured, with well-integrated, velvety tannins. The characteristic acidity of the Sangiovese provides freshness and liveliness, balancing the fullness of the body. Persistent aromas of ripe fruit and delicate notes of spices and undergrowth can be detected.

Pairings: Ideal with grilled red meats, game, roasts, and aged cheeses. Also excellent paired with traditional Emilian dishes such as tagliatelle with meat sauce, lasagna, and game.
Terroir: The Sangiovese di Romagna vines for the Domus Caia Riserva grow on calcareous and clay soils typical of the area, which promote concentration and tannin structure. The Mediterranean climate of Romagna, characterized by hot, dry summers and mild winters, allows for optimal ripening of the Sangiovese, creating intense and long-lived wines.
Vinification: After manual harvesting, the grapes are vinified using traditional techniques. Fermentation takes place at a controlled temperature to preserve the aromatic qualities and freshness of the fruit. The wine then matures in oak barrels for at least 18 months, developing aromatic complexity and softening the tannins.
