Grape Variety: Nebbiolo
Color: Brilliant garnet red with orange highlights, typical of the evolution of Nebbiolo.
Nose: A complex and profound bouquet with hints of ripe red fruit, cherry, and plum, enriched by floral nuances of violet and delicate earthy and spicy notes of tobacco, black pepper, and licorice.
Taste: On the palate, it is structured and austere, with firm but well-integrated tannins, supported by a lively acidity that gives the wine freshness and longevity. The finish is long and persistent, with a mineral and slightly balsamic aftertaste that reflects the Gattinara terroir.
Serving Temperature: 16/18° C
Pairings: Ideal with roasted red meats, braised meats, game, and aged cheeses. Perfect for accompanying Piedmontese dishes such as braised beef in Barolo, porcini mushroom risotto, and polenta with sausage.
Terroir: The vineyards of Gattinara are located on volcanic and porphyritic soils, which give the Nebbiolo a particular minerality and robustness, favoring a slow ripening of the grapes and developing a unique aromatic complexity.
Vinification: After manual harvesting, the grapes undergo fermentation at a controlled temperature with prolonged maceration to extract aromas and tannins. Subsequently, the wine matures for at least 3 years, partly in Slavonian oak barrels, which enrich the bouquet without masking its freshness.
